Baker’s Corner Chewy Fudge Brownie Mix

With cooler weather upon us, it’s time for cozy meals such as chili and soup, and desserts such as apple pie or brownies still warm from the oven. I grew up in a home where brownies were a favorite, especially for my mom. To this day, my mom usually has a boxed brownie mix stashed in her pantry for those times when a craving hits.

Aldi sells a couple of different boxed brownie mixes. They sell a premium brownie mix that contains chocolate chips, and they also sell a regular, more basic brownie mix with no chocolate chips (although you can certainly add your own). Here, we’re looking at the cheapest basic brownie mix Aldi stocks.

Baker’s Corner Chewy Fudge Brownie Mix cost $1.19 for an 18.3-ounce box at the time of publication. This is slightly less than the premium brownie mix Aldi also sells, which went for $1.85 for an 18-ounce box at the time of writing.

This chewy fudge brownie mix is a Regular Buy, so you should be able to find it at Aldi any time of year.

Ingredients include sugar, enriched bleached flour, cocoa, and 2% or less of soybean oil, corn starch, salt, and artificial flavor.

If you’re watching out for allergens, this contains wheat.

The box states it contains 20 servings. One prepared brownie has 170 calories, 8 grams of total fat (11% DV), 1.5 grams of saturated fat (7% DV), 23 grams of total carbohydrates (8% DV), and 15 grams of added sugars.

To make brownies, you’ll need 1/4 cup of water, 2/3 cup of vegetable oil, and 2 eggs.

Grease or use cooking spray on the bottom of a pan. Empty the mix into a bowl. Add the water, vegetable oil, and eggs. Mix with a spoon until everything is moistened.

If your pan size you’re using is 13″ x 9″, bake at 350 degrees for 24-26 minutes. For a 9″ x 9″ pan, bake at 350 degrees for 38-40 minutes. For an 8″ x 8″ pan, bake at 325 degrees for 52-54 minutes. Regardless of what pan you use, bake until a toothpick inserted 2 inches from the side of the pan comes out almost clean.

The box adds that for cake-like brownies, you can increase the eggs to 3.

For baking at high altitudes, stir 3 tablespoons of flour into the dry brownie mix and make brownies using 1/3 cup of water, 1/3 cup of oil, and 2 eggs. For cake-like brownies at high altitude, stir 3 tablespoons of flour into the dry brownie mix and make brownies using 1/4 cup water, 2/3 cup oil, and 3 eggs.

The box suggests potential add-ins if you want to make your brownies more interesting. For salty crunch, add 1/2 cup of crushed pretzels or potato chips. For fruity chew, add 1/2 to 1 cup of dried cranberries, cherries, or coconut. For more chocolate, add 1/2 cup of chopped candy bar.

After baking, cool and store the brownies tightly covered.

I baked these in an 8″ x 8″ pan for about 50 minutes in my oven, but I probably should have taken them out 3-5 minutes sooner because the edges were a little crispier than I prefer.

These are what I expect from a boxed brownie mix. They’re chocolaty, soft, and fudgy. They’re good on their own, but you can make them more decadent by sprinkling a little powdered sugar on top before slicing them. These also go well with a little vanilla ice cream scooped on top, which is the best way to eat brownies in my opinion. If you need a basic brownie mix, this one will do.

The Verdict:

Baker’s Corner Chewy Fudge Brownie Mix is the cheapest brownie mix option at Aldi. It bakes up fine, and you can incorporate add-ins such as chocolate chips if you want. We recommend picking up some vanilla ice cream to go with these.

  2. Why was the recipe for chewy Fudge Brownie mix changed ? The and the time oil was increased & the water decreased and the time was shortened. I hope it is as good as the old recipe.

    • Why would they change the recipe? The new one is horrible !!! Please change back the old recipe was the best hands down .

  3. I agree. This was once my favorite Brownie mix. Now they are terrible. I will never buy this item again. I think due to inflation they are putting less Brownie mix in the package and decreased all the other ingredients as well so they can keep the price the same. Now they barely fit a 9 x 13 pan and are thin and crispy. This needs to be baked in a 9×9 pan, maybe they would be better. I will be buying my brownie mix elsewhere from now on ☹️

    • The flavoring has completely changed. We are so disappointed too. Moving onto brand names at other stores now, unfortunately.

        I agree! These brownies are NOT delicious , chocolatey, but dry as a bone. I even used 2 jumbo eggs and used a 9”x9” pan. DRY😞 My daughter commented that she too was SO disappointed. We had been using this brownie mix for years. But no more

    Just tried the new recipe. It is terrible!!! I loved the old recipe and always counted on it to make when I had to take a dessert somewhere. I will not be buying this again until they bring back the old mix. I happened to have a box of the old mix still on hand and compared the two. No comparison! The old tastes great. The new was so bad I threw them away!
