If you eat a gluten free diet, Aldi sells a few products for you. We’ve tried the discount grocery store’s gluten free copycat Red Lobster biscuits and loved them. We also like Aldi gluten free cornbread mix, and their gluten free mac and cheese and stuffed sandwiches aren’t bad. Today, we’re looking at the versatile gluten free baking mix Aldi sells, which can be used to make pancakes, waffles, biscuits, and coffee cake.

LiveGfree Gluten Free Pancake & Baking Mix

liveGfree Gluten Free Pancake & Baking Mix cost $1.85 for a 16-ounce box at the time of publication. The package states this “makes excellent pancakes, waffles, biscuits, muffins & more.” It’s kosher and has the Good Housekeeping quality seal. It also has a symbol indicating it’s a 7th Annual GFA Winner in The Gluten Free Buyers Guide.

This is a Regular Buy, which means you should be able to find it at Aldi any time of year.

Ingredients are: rice flour, sugar, baking powder, potato starch, xanthan gum, and salt.

One box has 11 servings, with 1/3 of a cup making about 3-4 pancakes.

So far, we’ve made pancakes with this gluten free mix. The box makes three batches of pancakes if you follow the recipe on the back of the box, and each batch makes about 10 pancakes. Our pancakes turned out light, fluffy, and delicious, and just slightly crisp in some spots on the outside. Some people in my household thought the pancakes had a slight rice-like flavor (because they’re made with rice flour), but I didn’t really notice it. These are a good option if you want to make pancakes that will appeal to a crowd that includes both gluten free and non gluten free diners.

I’ll update this post if we try any of the other recipes on the box. I might try the gluten free waffle recipe or the coffee cake recipe in the future. In the meantime, all of the recipes on the box are posted below:

Biscuits

Ingredients: 

  • 2 cups liveGfree baking mix
  • 1/3 cup shortening
  • 2/3 cup milk
  • 3 large eggs

Directions: 

  1. Heat oven to 400 degrees.
  2. Cut shortening into the mix, using a fork, until particles are the size of small peas. Stir in remaining ingredients until soft dough forms.
  3. Drop by spoonfuls onto an ungreased cookie sheet.
  4. Bake 13-16 minutes or until golden brown. (Yields 10 biscuits.)

Pancakes

Ingredients: 

  • 1 cup liveGfree baking mix
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 large egg

Directions: 

  1. Preheat griddle to medium heat.
  2. Stir ingredients until blended.
  3. Pour slightly less than 1/4 cupfuls onto hot greased griddle.
  4. Turn after 1 to 1 1/2 minutes when edges are dry and bubbles are breaking. Brown lightly on the reverse side. (Yields 10 pancakes.)

Waffles

Ingredients: 

  • 1 1/3 cups liveGfree baking mix
  • 1 1/4 cups milk
  • 3 tablespoons vegetable oil
  • 1 large egg

Directions: 

  1. Stir ingredients until blended.
  2. Pour onto hot greased waffle maker and close lid.
  3. Bake about 5 minutes or until steaming stops.
  4. Carefully remove waffle. (Yields eight 4-inch waffles.)

Coffee Cake with Fruit

Ingredients: 

  • 16-oz. package of liveGfree baking mix
  • 4 large eggs
  • 1/2 cup butter, melted
  • 2 tablespoons gluten free vanilla
  • 1 cup milk
  • 2/3 cup granulated sugar
  • 1 can (21 ounces) fruit pie filling in a flavor of your choice
  • For the glaze: 1 cup of powdered sugar and 2 tablespoons of milk

Directions:

  1. Heat oven to 375 degrees. Grease a 15x10x1-inch pan.
  2. In a large bowl, stir all coffee cake ingredients except pie filling until well blended. Spread 2/3 of batter (about 2 1/2 cups) in the pan.
  3. Spread pie filling over the batter. Drop remaining batter by tablespoons onto the pie filling.
  4. Bake 20-25 minutes or until golden brown. Meanwhile, in a small bowl, mix the glaze ingredients until smooth. Drizzle glaze over warm coffee cake. Serve warm or cool.

The Verdict:

liveGfree Gluten Free Pancake & Baking Mix is a versatile rice flour-based option that includes recipes to make pancakes, waffles, biscuits, and coffee cake with fruit. We tried the gluten free pancake recipe. It was easy to make, and the pancakes were fluffy and delicious with a hint of crispiness on the outside. If you don’t tell people these are gluten free, they might never guess it.
