Touchdown Tacos

My family loves a good taco recipe. When I saw this recipe, I was intrigued by the pickled vegetable salsa that goes on top of the tacos, so I had to make it. With fall and football season around the corner, the recipe name seemed appropriate, too.

The Recipe:

Ingredients –

16-ounce USDA Choice Top Sirloin Steak (as seen in some regional Aldi ads for August 17)

½ teaspoon Stonemill Essentials Garlic Powder

½ teaspoon Stonemill Essentials Onion Powder

¾ teaspoon Stonemill Essentials Ground Cumin

¾ teaspoon Stonemill Essentials Paprika

¾ teaspoon Stonemill Essentials Chili Powder

1 teaspoon Stonemill Essentials Iodized Salt, divided, plus additional to taste

1 ½ teaspoons Stonemill Essentials Ground Black Pepper

1 lime, juiced and zested

1 lemon, juiced

2 tablespoons Carlini Vegetable Oil

1 ½ cups Tuscan Garden White Vinegar

2 teaspoons Baker’s Corner Granulated Sugar

1 small cucumber, diced

½ red onion, diced

1 red pepper, diced

8 Benita 6″ Corn or Flour Tortillas

Directions –

  1. Heat grill to medium-high heat.
  2. Season meat with spices, ½ teaspoon salt, lime, lemon juice and oil. Marinate 15 minutes at room temperature.
  3. Meanwhile, in a small saucepan, bring vinegar, sugar and remaining ½ teaspoon salt to a boil. Add vegetables and cook for 2 minutes. Remove from heat and let stand for 15 minutes. Strain.
  4. Cook steak on grill for 2 minutes each side. Rest 5 minutes before slicing.
  5. Grill tortillas for about 30 seconds each side. Fill with sliced steak and top with salsa, lime zest and a sprinkle of salt to taste.

Chef’s Thoughts

The marinade for the sirloin steak in this taco recipe is excellent. It was simple to put together, and the beef was delicious after grilling.

The pickled vegetable salsa was easy to make as well, and my husband loved it because it was such a unique taco topping. However, the pickled salsa has a strong taste and smell, and I prefer a more traditional tomato salsa. I like the beef base for these tacos, and they taste great with regular toppings like cheese, salsa, and sour cream. The marinated sirloin steak would also be good in fajitas or on steak nachos.

The Verdict:

If you like unusual taco toppings or if you enjoy pickled foods, you will like this recipe for Touchdown Tacos. If not, the marinated beef in this recipe makes a good base for any tacos, and you can add other toppings of your choice.
