Recipe Review: Peanut Butter Granola Bites

We’ve cut back dramatically on ultra-processed foods lately, and especially things with lots of added sugar. When we do have treats, we lean a lot toward homemade goodies that showcase better-for-you ingredients like oats, fruit, and peanut butter.

While looking around the recipe section on Aldi’s website recently, I found something that fit the bill. Yes, Aldi actually has a quite sizeable collection of recipes on its website. It can be a good place to browse, especially if you’re wondering what you can make with ingredients purchased only at Aldi, which is a limited-inventory grocery store that doesn’t stock the same large variety as traditional big grocery stores.

The Aldi recipe files include dinner entrees like sheet pan chicken fajitas, but they also include recipes for breakfast items, appetizers, desserts, drinks, and even snacks.

In the snack section, I found a recipe for these Peanut Butter Granola Bites. These are a healthier alternative to a traditional sugary dessert or snack. They would also make a nutritious breakfast. Plus, they’re quick and easy to mix up, and they bake in just 7 minutes.

These contain just five simple ingredients: fruit (either blueberries or diced strawberries), quick oats, peanut butter, honey, and an egg. I used a combination of fresh blueberries and some frozen diced strawberries when I made these. You could also probably experiment with other fruit such as raspberries or diced peaches if you wanted to.

One other note is that this recipe calls for 3 tablespoons of honey. My family and I felt like these granola bites were plenty sweet, so the next time I make them, I might halve the amount of honey I use to cut down on sugars.

This recipe made 15 granola bites. It’s not a lot. My family of four devoured these pretty quickly. So, if you’re feeding more than just a few people, or if you want leftovers, you might consider doubling the recipe.

  1. Preheat the oven to 400 degrees.
  2. Combine all ingredients in a medium-sized bowl.
  3. Place tablespoon-sized scoops on a parchment-lined baking pan. Bake for 7 minutes.
