EDITOR’S NOTE: This mix went from being a Regular Buy item that was in stores year round to being a seasonal item that is sold during the fall/winter months. Readers began to notice during the spring and summer of 2020 that this item had disappeared from Aldi’s shelves. When we reached out to Aldi to find out why, they told us it had been discontinued. However, shortly afterward we spotted the mix on Aldi shelves again, this time with a Seasonal Favorite label. So if you like these and want to enjoy them year round, you’ll want to stock up while they’re available. 


Aldi has all the baking supplies you need to make cookies or brownies from scratch, but the discount grocery store also carries plenty of quality boxed mixes if you want to take some of the work out of baking. One of my favorites is the Baker’s Corner Chocolate Chip Cookie Brownie Bar Mix. It’s great for those times when you can’t decide whether to make brownies or cookies. Just make both!

Baker's Corner Chocolate Chip Cookie Brownie Bar Mix

This mix was $1.79 for a 19.5-oz box at the time of publication. The finished product is a brownie topped with chocolate chip cookie bites, and it is as good as it sounds.

The brownie portion of this dessert is fudgy and moist, while the chocolate chip cookie portion tastes as you would expect, with a decent amount of chocolate chips. It’s good served as is, or top it with ice cream or whipped cream.

I like to keep a box of this mix in my pantry so I have an easy dessert when unexpected company comes. It’s easy to assemble and requires just a bit of butter, an egg, and some water in addition to the mix.

One box makes about 16 servings, and one serving contains 140 calories, 2 grams of total fat (11% of your daily value), 1 gram of saturated fat (23% DV), 25 mg of cholesterol (9% DV), 170 mg of sodium (7% DV), 29 grams of carbs (11% DV), and 19 grams of added sugars (38% DV).

To prepare the cookie brownie bars, preheat your oven to 325 degrees. Grease the bottom of an 8″x8″ pan.

Combine the brownie mix with 1/2 stick of melted butter, 2 tablespoons of water, and 1 egg until well blended. Spread into the prepared pan.

Combine the cookie mix with 4 tablespoons of softened butter and 1 tablespoon of water until a soft dough forms. Drop the cookie dough by rounded teaspoonfuls evenly onto the brownie batter.

Bake for 41 to 45 minutes or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Cool before serving.

The back of my box also features a bonus recipe, which I have made. These are delicious in cupcake or muffin form, and making them this way helps with portion control. You also don’t need any additional ingredients to make these in cupcake form versus bar form.

Cookie Brownie Cupcakes Recipe

Preheat your oven to 350 degrees.

Place 12 paper baking cups in regular-sized muffin cups (or grease lightly with nonstick cooking spray).

Prepare cookie dough and brownie batter as directed above. Divide brownie batter evenly into prepared muffin cups (about 1/4 full). Divide cookie dough into 12 dough balls and place one into each muffin cup.

Bake 28-33 minutes or until a toothpick inserted into the center comes out clean.

The Verdict:

Aldi’s Baker’s Corner Chocolate Chip Cookie Brownie Bar Mix is the perfect marriage of brownies and chocolate chip cookies. When you can’t decide whether to make brownies or cookies, just make both. I like to keep a box of this mix in my pantry for times when I need to make a dessert quickly and without a lot of fuss.

  1. Hi Rachael- I’m a big fan of several Baker’s Corner mixes: Brownie/Cookie bars and Brownie mix. They are delicious and easy to whip up!
    My question is: are these safe for someone with a nut allergy? There is no information on the mix box to indicate that the mix may contain traces of nuts.

    • I haven’t seen it lately at Aldi. It’s possible there are problems in the supply chain right now, as is the case with a lot of things these days.

  4. Question, how does the picture on the box even halfway resemble the result? I dont get it, did everything exactly right and mine looks solid dark brown. What is that picture on the front, what is that from because it cant be this. Taste good but dont get it?
