Millville Protein Pancake and Waffle Mix

Pancakes are a favorite around our house, especially paired with sausage. My wife will sometimes make them from scratch, but we’ve also made them with Aldi’s outstanding all-purpose baking mix. The downside to pancakes is that they are full of carbs and, as a result, probably not as filling as they should be.
Enter protein pancakes, a more recent trend in breakfast foods. Protein pancakes are popular among people looking to bulk up, but they are also potentially appealing to people who want more filling pancakes or who are looking for something a bit lower in carbs, like diabetics.
Aldi sells a protein pancake and waffle mix under the Millville label. It was previously sold under the now-discontinued Aunt Maple’s private label. It’s an everyday Regular Buy. That means you can find this mix in stores all the time.
In 2025, one 20-ounce box costs $3.49, which comes out to 17.4 cents an ounce. That’s more than standard pancake or waffle mixes but is less than many of the name brand versions of protein pancakes and waffles I see out there.
If you’ve made pancakes (or waffles) before, you’ll be right at home with the preparation instructions in this mix. To make it, you mix 1 cup of protein pancake mix with 2/3 cup of water, whisking it together. It will turn into a thick and slightly lumpy batter.
To make pancakes, you can scoop out the desired amount of batter and pour it over a 375-degree heated griddle that has been lightly greased with shortening or oil. Pour about 1/4 of a cup of batter per pancake, which makes about 5-6 pancakes or so. The instructions say to cook the pancakes for 1 1/2 minutes on each side. I recommend keeping a close eye on the pancakes so they don’t burn on the outside.
To make waffles, you scoop out the desired amount of batter and pour it into a preheated waffle iron. You then cook it for 2-4 minutes or until golden brown.
The primary protein ingredient in this mix is oats, alongside whey protein and wheat flour. While the oat flavor isn’t overly strong, it’s present. If you absolutely hate oats, you may not like these, but if you’re at least okay with oats they make a worthy pancake or waffle substitute. I found that if they’re heavily toasted on the skillet, the oat crunch can come through a bit, but otherwise the texture isn’t far off the mark for traditional pancakes.

In terms of ingredients, these do have fewer carbs than traditional pancakes, although they are by no means carb-free. They have 36 grams of carbs but also have 5 grams of dietary fiber, making for a solid 7:1 carbs-to-fiber ratio. They also contain a fair amount of protein, about 14 grams per serving.
Ingredients include 100% whole grain wheat flour, 100% whole grain oat flour, whey protein isolate, brown sugar, and wheat protein isolate. Allergens are wheat, milk, soy, and egg.
The Verdict:
Millville Protein Pancake and Waffle Mix makes for a good choice if you want protein-fortified pancakes or waffles. While more expensive than traditional pancakes, they cost less than name-brand protein pancake mixes, and the taste and texture aren’t bad, especially if you don’t mind a hint of oat flavor. Not only are they high in protein, but they also have a healthy amount of fiber, too.



However, the serving size on the box (1/2 cup) and the preparation instructions do not jibe. On the opposite side of the box that show nutrition facts it is indicated that if you follow the preparation instructions you will receive 14 grams of protein however, on the back of the box the prep instructions indicate using 1 cup of protein mix to 2/3 cup of water (would this not be 28 grams of protein and 440 calories)?
I made the whole box. Cam up with total 977g. Box only had 524g. I subtracted 524 from 977 and got 453g of water. Then I divided the servings I made with was 9.
And found that each serving has ~ 50g water. So my servings were about 48g mix.

I was never a big fan of pancakes until I fixed them with this mix. I add elderberries that I grow in my yard to the batter and serve with Aldi Never any! uncured bacon. It is now my favorite breakfast or anytime meal
My wife is in need of high protein and these are wonderful!!! Easy to make and tasty as well, along with the higher protein! Good stuff – just made a batch for tomorrow – used up the rest of the box…. (I will have to try to find the frozen waffles as well, however the last time I was in Aldi if did not see the pancake/waffle so I assume they both were a specialty item and are no longer available….
I recently tried the protein pancake mix in chocolate chip flavor. Overall good & better ingredients than other mixes. I was looking to indulge in a somewhat healthier way and to save money instead of ordering at a breakfast restaurant. I really enjoyed them and they are very filling. I also added ground flax seed also from Aldi. With the chocolate there is no need for syrup so I topped them with fresh banana and blueberries. Definitely will be my go to when I have a taste for pancakes.
That’s awesome using elderberries. Sometimes I get the breakfast chicken sausage from Never Any.
